Moroccan chickpea sweet potato stew

1 tbs olive oil

1 yellow onion

2 carrots

1 celery

2 garlic cloves

1 tsp ginger

1tsp coriander

1tsp cumin

1/2 tsp turmeric

1/4 cinnamon

1/4 tsp nutmeg

1/2 tsp sugar

2 sweet potatoes chopped diced

1 bag of frozen green beans

1 can chickpeas

1can diced tomatoes

1 1/2 cup water

salt black pepper tsp lemon juice


1 in large saucepan heat oil over medium heat add onion carrots celery garlic ginger mix let it cook for ten mins


2 stir in coriander cumin turmeric cinnamon nutmeg sugar add chopped sweet potatoes chickpeas

and can tomatoes water bring to broil once it broil lower the heat


3cover and simmer until the veggies are tender about 40 min stir in the parsley and lemon juice let it cook 10 next add pepper salt to taste enjoy
