African inspired red bean stew

1 tbs olive oil
1 med yellow onion chopped
2 med carrots 1/4 inch dice
3 garlic cloves minced
1 grated fresh ginger
1/2 tsp cumin
1/8 tsp cayenne
2 potatoes peeled and 1/2 inch dice
3 cups of dry cook red beans or 1 15 oz can beans drained and rise
1 can of crushed tomatoes
1 4 ounce can green mild chilies drained
1 1/2 cups veggie broth or water
salt black pepper
1/4 cup peanut butter
3 cups of spinach
1/3 cup roasted peanuts

1 in a saucepan heat oil over med heat.
add the onion carrots.cover and cook until softened,about 10 mins.stir the garlic and ginger.cook,uncovered until fragrant about 1 min
2 add cumin cayenne potatoes beans tomatoes chiles and 1 cup of water or broth season with salt and pepper to taste cover and bring to a boil then reduce the heat to low and simmer until the veggies are soft about 30 mins
3 in small bowl min peanut butter and half cup water until blended then add it to the stew add the spinach and cook stirring until wilted about 3 mins taste adjusting seasonings if necessary sprinkle peanuts then injoy
